All Whole Foods Classes are held upstairs in the Discovery Kitchen at Whole Foods Market in Cool Springs.

What Do I Do With All These Veggies?

Are you enjoying the bounty of Middle Tennessee this summer?  Picking up fresh local produce from Whole Foods, succumbing to the beauty of all the fresh foods at the Farmer's Market or enjoying a big box of produce from your local CSA?  Are you a little overwhelmed with too many green onions, scallions, greens and squash?  Are you tempted to throw it out because you don't know what to do with it all?

Celeste, I read your entire binder the minute I got home after putting the kids in their daily "quiet time" hour.

Yesterday morning I had a science lab going in my kitchen!! I had all these soaking bowls on the counter. Soaked raw almonds, soaked brown rice, soaked pinto beans and soaked steel cut oats. For lunch, we had homemade chicken soup with the brown rice and it was delicious. No more white rice, right.

For dinner, we had pinto beans. I also made a spinach salad with raw vegies. For desert we ate organic yogurt with organic granola. This morning I'm serving the steel cut oats with fruit and fresh squeezed orange juice. Yay! You've changed my life Celeste!
